Macarons are a French fine paste, three layer cookie. The two outer wafers are meringue-based with a middle layer of buttercream or ganache. Typically a chocolate emulsion with a fruit flavoring. The outer meringue wafer may also be colored and flavored. A type of mint is a nice flavoring. I love a berry flavored ganache for the middle layer. They are very delicate and light compared to the English chocolate drop cookie with coconut know as a Macaroon.
